  1. Preheat oven to 400°F (200°C).
  2. Wash the potato thoroughly and poke several times with a fork. This allows steam to escape.
  3. Bake for 40-45 minutes, or until the potato is easily pierced with a fork and feels soft.
  4. While the potato is baking, heat olive oil in a skillet over medium heat. Add the diced onion and cook until softened and translucent, about 5-7 minutes. Add the minced garlic and cook until fragrant, about 1 minute.
  5. Remove the baked potato from the oven and let cool slightly.
  6. Carefully cut the potato in half lengthwise and scoop out the flesh, leaving a 1/4-inch border to maintain the shape. Be careful not to tear the skin.
  7. In a bowl, mash the scooped-out potato flesh with the sautéed onions and garlic, salt, and pepper.
  8. Spoon the potato mixture back into the potato skins, mounding slightly.
  9. Top generously with shredded cheddar cheese.
  10. Bake for another 5-10 minutes, or until the cheese is melted and bubbly.
  11. Remove from the oven and let cool slightly.
  12. Top with a dollop of sour cream and chopped chives (if using) before serving.
