Canadian Garlic Potato Boats
Baked potato halves filled with a savory mix of sauteed onions, garlic, cheddar cheese, and a dollop of sour cream.
Ingredients
- 1 large russet potato Potatoes
- 1/4 medium, finely diced Onions
- 2 cloves, minced Garlic
- 1 tbsp Olive oil
- 1/2 cup shredded Shredded cheddar cheese
- 2 tbsp Sour Cream
- to taste Salt
- to taste Black pepper
- 1 tbsp, chopped (optional) Chives
Instructions
- Preheat oven to 400°F (200°C).
- Wash the potato thoroughly and poke several times with a fork. This allows steam to escape.
- Bake for 40-45 minutes, or until the potato is easily pierced with a fork and feels soft.
- While the potato is baking, heat olive oil in a skillet over medium heat. Add the diced onion and cook until softened and translucent, about 5-7 minutes. Add the minced garlic and cook until fragrant, about 1 minute.
- Remove the baked potato from the oven and let cool slightly.
- Carefully cut the potato in half lengthwise and scoop out the flesh, leaving a 1/4-inch border to maintain the shape. Be careful not to tear the skin.
- In a bowl, mash the scooped-out potato flesh with the sautéed onions and garlic, salt, and pepper.
- Spoon the potato mixture back into the potato skins, mounding slightly.
- Top generously with shredded cheddar cheese.
- Bake for another 5-10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool slightly.
- Top with a dollop of sour cream and chopped chives (if using) before serving.
