Canadian Cottage Cheese Pancakes with Berries
Fluffy and high-protein pancakes made with cottage cheese and topped with fresh berries.
Ingredients
- 1.5 cups Cottage Cheese
- 3 Large Eggs
- 1/2 cup All-purpose flour
- 1 tsp Baking powder
- 1 cup Blueberries
- 1/2 tsp Vanilla extract
- To taste Maple syrup
Instructions
- In a blender, combine cottage cheese, eggs, flour, baking powder, and vanilla extract.
- Blend until smooth. Let the batter sit for 5 minutes to allow the flour to absorb moisture.
- Heat a lightly oiled griddle or frying pan over medium heat.
- Pour 1/4 cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown.
- Top with fresh blueberries and maple syrup.
