Canadian Chicken and Potato Bake
A comforting Canadian-inspired chicken and potato bake with bacon and cheese strings.
Ingredients
- 3 medium Chicken Breast
- 150g Naturally Smoked Bacon
- 3 medium Russet Potatoes
- 6 Cheese Strings
- 1 medium Onion
- 3 cloves Garlic
- 1/2 cup Sour Cream
- 2 tbsp Butter
- 1/2 tsp Dried Thyme
- to taste Salt and Pepper
Instructions
- Preheat oven to 375°F (190°C).
- Dice potatoes and onion. Mince garlic.
- Season chicken breasts with salt, pepper, and dried thyme. Bake the chicken breast in the oven at 375°F for 25-30 minutes, or until cooked through to an internal temperature of 165°F (74°C). Set aside to cool slightly, then dice.
- Fry bacon in a skillet until crispy. Set aside to cool, then crumble into small pieces.
- In the same skillet, sauté diced potatoes and onions in bacon fat until tender, about 10 minutes. Add minced garlic and cook for another minute until fragrant.
- In a bowl, combine the sautéed potatoes and onions, diced chicken, crumbled bacon, and sour cream. Season with salt and pepper to taste.
- Transfer the mixture to a greased baking dish. Top with cheese strings, spacing them evenly.
- Bake in the preheated oven for 20 minutes, or until the cheese is melted and lightly browned. Broil for the last 1-2 minutes for extra browning, if desired, but watch closely to prevent burning.
- Let cool slightly before serving.
