  1. Preheat oven to 375°F (190°C).
  2. Dice potatoes and onion. Mince garlic.
  3. Season chicken breasts with salt, pepper, and dried thyme. Bake the chicken breast in the oven at 375°F for 25-30 minutes, or until cooked through to an internal temperature of 165°F (74°C). Set aside to cool slightly, then dice.
  4. Fry bacon in a skillet until crispy. Set aside to cool, then crumble into small pieces.
  5. In the same skillet, sauté diced potatoes and onions in bacon fat until tender, about 10 minutes. Add minced garlic and cook for another minute until fragrant.
  6. In a bowl, combine the sautéed potatoes and onions, diced chicken, crumbled bacon, and sour cream. Season with salt and pepper to taste.
  7. Transfer the mixture to a greased baking dish. Top with cheese strings, spacing them evenly.
  8. Bake in the preheated oven for 20 minutes, or until the cheese is melted and lightly browned. Broil for the last 1-2 minutes for extra browning, if desired, but watch closely to prevent burning.
  9. Let cool slightly before serving.
