  1. Lightly brush the cut sides of the brioche buns with melted butter and toast in a pan or toaster until golden brown.
  2. Fry Canadian bacon slices in a pan until crisp. Remove and set aside.
  3. In the same pan, melt butter. Fry eggs to your liking. Season with ground black pepper.
  4. During the last minute of cooking, place cheddar cheese slices on top of the eggs to melt slightly.
  5. Drizzle the bacon with maple syrup.
  6. Assemble sandwiches: bottom bun, fried egg with cheese, Canadian bacon, top bun.
