Curried Chickpea Salad Sandwich
A flavorful and protein-packed chickpea salad sandwich with Indian-inspired curry flavors.
Ingredients
- 1/2 cup, cooked chickpeas Clic Dry Beans Lentils
- 1/4 cup, finely chopped Yellow Onion
- 2 tbsp Mayonnaise
- 1/2 tsp Curry Powder
- 1/8 tsp Chili flakes
- 1 tsp lemon juice Lemons
- 1 tbsp, chopped Cilantro
- 2 slices Deli World Light Rye
Instructions
- If starting from dry, cook dry chickpeas as per package instruction or use canned chickpeas, drained and rinsed.
- In a bowl, mash chickpeas with a fork, leaving some chunks for texture.
- Add chopped onion, mayonnaise, curry powder, chili flakes, and lemon juice.
- Mix well until thoroughly combined.
- Stir in cilantro.
- Spread the chickpea salad mixture on the bread slices.
- Serve immediately.
