Thai Chicken and Rice Noodle Soup
A comforting and aromatic Thai-inspired chicken noodle soup, perfect for a family dinner.
Ingredients
- 1 lb Boneless Chicken Breast
- 6 cups Chicken Broth (low sodium)
- 8 oz Thin Rice Noodles
- 1 Red Bell Pepper, sliced
- 1 cup Mushrooms, sliced
- 2 tbsp Ginger, minced
- 3 cloves Garlic, minced
- 2 tbsp Soy Sauce
- 2 tbsp Lime Juice
- 1 tbsp Fish Sauce
- 1/4 cup Cilantro, chopped
- to taste Optional: Sriracha or Chili Oil
Instructions
- Cut chicken into bite-sized pieces.
- In a large pot, bring chicken broth to a boil.
- Add chicken, red bell pepper, mushrooms, ginger, and garlic to the pot.
- Reduce heat and simmer for 15-20 minutes, or until chicken is cooked through. Simmering longer will enhance the broth's flavor.
- Add rice noodles and cook according to package directions (usually 5-7 minutes).
- Stir in soy sauce, fish sauce, and lime juice.
- Taste and adjust seasonings as needed.
- Garnish with cilantro and sriracha or chili oil (if using).
- Serve hot.
