Quick Chicken Thigh and Asparagus Salad
Ingredients
- 1 lb Fresh AIR-CHILLED Boneless Skinless Chicken Thighs
- 1/2 lb Asparagus
- 2 tbsp Organic Extra Virgin Olive Oil
- 2 tbsp Kraft Salad Dressing
- 1 cup Strong Roots Entrées
- 1 Romaine Hearts
- 1/2 cup Unico Tomatoes, Chickpeas, Lentils or Beans
Instructions
- Preheat oven to 400°F (200°C).
- Toss asparagus with 1 tbsp olive oil, salt, and pepper. Roast for 12-15 minutes until tender-crisp.
- While asparagus roasts, grill or pan-fry chicken thighs until cooked through, about 5-7 minutes per side. Let cool and slice.
- In a large bowl, combine the Romaine Hearts, Strong Roots Entrées, cooked asparagus, sliced chicken,Unico Beans, andKraft Salad Dressing.
- Toss gently and serve immediately.
