Vegetable Chow Mein with Gluten-Free Noodles
A quick and easy Chinese-inspired vegetable chow mein made with gluten-free noodles and a medley of fresh veggies.
Ingredients
- 85g Gluten-Free Chow Mein Noodles
- 1 cup Bok Choy
- 1/2 medium Carrot
- 1/2 Green Bell Pepper
- 2 tbsp Gluten-Free Tamari
- 1 tsp Toasted Sesame Oil
- 1 clove Garlic
- 1/2 tsp Ginger
- 1 tsp Rice Vinegar
- 1/2 tsp Cornstarch
Instructions
- Cook gluten-free chow mein noodles according to package directions. Rinse with cold water and set aside.
- Prepare the sauce: In a small bowl, whisk together gluten-free tamari, rice vinegar, and cornstarch. Set aside.
- Heat toasted sesame oil in a large skillet or wok over medium-high heat.
- Add minced garlic and grated ginger, stir-fry for 30 seconds until fragrant.
- Add chopped bok choy, sliced carrot, and green bell pepper, stir-fry for 5-7 minutes until tender-crisp.
- Add cooked noodles to the skillet and pour the sauce over the vegetables and noodles. Toss quickly and continuously to prevent sticking, until everything is evenly coated and the sauce has thickened slightly.
- Serve immediately.
