Lentil and Vegetable Curry
A hearty and flavorful Indian-inspired lentil and vegetable curry.
Ingredients
- 1/2 cup (100g) Dry Red Lentils
- 1/2 medium, diced Onion
- 1 medium, diced Carrot
- 1/2 cup (75g) Frozen Peas
- 1 tbsp Cajun Spice Blend
- 1 tsp Honey
- 1 tsp White Vinegar
- 1.5 cups Vegetable Broth
- 1 tbsp Olive Oil
- 1/4 tsp Turmeric Powder
- 1/4 tsp Garam Masala
- to taste Salt
- to taste Black Pepper
Instructions
- Rinse the lentils.
- Heat olive oil in a pot over medium heat.
- Add diced onion and carrot, cook until softened.
- Add turmeric and garam masala, and cook for 30 seconds.
- Add the lentils and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender.
- Add the frozen peas and cajun spice blend, cook for 5 minutes.
- Add white vinegar and honey to taste.
- Season with salt and pepper to taste.
- Serve hot.
