Instructions

  1. Rinse the lentils.
  2. Heat olive oil in a pot over medium heat.
  3. Add diced onion and carrot, cook until softened.
  4. Add turmeric and garam masala, and cook for 30 seconds.
  5. Add the lentils and vegetable broth.
  6. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender.
  7. Add the frozen peas and cajun spice blend, cook for 5 minutes.
  8. Add white vinegar and honey to taste.
  9. Season with salt and pepper to taste.
  10. Serve hot.
