Spiced Mexican Potato and Chickpea Bowl
A vibrant bowl with spiced potatoes and chickpeas, topped with a creamy avocado crema and a sprinkle of cilantro.
Ingredients
- 1 medium, diced Potatoes
- 1/2 cup, cooked Chickpeas
- 1 tsp Chili Powder
- 1/2 tsp Cumin
- 1/4 tsp Garlic powder
- 1/4 tsp Smoked paprika
- 1/4 medium Avocado
- 1 tsp Lime Juice
- 1 tbsp, chopped Cilantro
Instructions
- Dice and boil potatoes until tender, about 15-20 minutes. Drain well.
- In a bowl, toss cooked potatoes and chickpeas with chili powder, cumin, garlic powder, and smoked paprika to coat evenly.
- Smash avocado and mix in lime juice. Season with salt and pepper to taste.
- Place spiced potatoes and chickpeas in a bowl and top with the avocado crema. Garnish with fresh cilantro.
