Spiced Chickpea and Potato Salad with Tomato Vinaigrette
A refreshing and flavorful Mediterranean salad with roasted potatoes, spiced chickpeas, and a vibrant tomato vinaigrette.
Ingredients
- 1 medium Potatoes
- 1/2 cup Chickpeas
- 1/2 cup, diced Tomatoes
- 2 tbsp Olive oil
- 1/2 tsp Smoked paprika
- 1/4 tsp Cumin
- 1 tbsp Red wine vinegar
- 1 tbsp, chopped Fresh parsley
- to taste Salt
- to taste Black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Dice potato into 1/2-inch cubes and toss with 1 tbsp olive oil, smoked paprika, cumin, salt, and black pepper.
- Spread potatoes in a single layer on a baking sheet and roast for 30-35 minutes, or until tender and slightly browned, flipping halfway through.
- In a bowl, combine roasted potatoes, chickpeas, and diced tomatoes.
- In a separate small bowl, whisk together 1 tbsp olive oil, red wine vinegar, chopped fresh parsley, salt, and black pepper.
- Pour vinaigrette over the salad and toss gently to combine.
- Serve chilled or at room temperature. Garnish with additional fresh parsley if desired.
