  1. Preheat oven to 400°F (200°C).
  2. Dice potato into 1/2-inch cubes and toss with 1 tbsp olive oil, smoked paprika, cumin, salt, and black pepper.
  3. Spread potatoes in a single layer on a baking sheet and roast for 30-35 minutes, or until tender and slightly browned, flipping halfway through.
  4. In a bowl, combine roasted potatoes, chickpeas, and diced tomatoes.
  5. In a separate small bowl, whisk together 1 tbsp olive oil, red wine vinegar, chopped fresh parsley, salt, and black pepper.
  6. Pour vinaigrette over the salad and toss gently to combine.
  7. Serve chilled or at room temperature. Garnish with additional fresh parsley if desired.
