French Ground Beef Shepherd's Pie with Cauliflower Mash

  1. Preheat oven to 375°F (190°C).
  2. Chop onion, carrots, and celery. Mince garlic.
  3. Brown ground beef in a large skillet over medium heat. Drain excess fat. Ensure the internal temperature reaches 160°F (71°C).
  4. Add onion, carrots, and celery to the skillet and cook until softened.
  5. Stir in garlic, tomato paste, thyme, bay leaf, beef broth, salt, and pepper. Simmer for 10 minutes.
  6. While the meat mixture simmers, steam or boil cauliflower until tender.
  7. Drain cauliflower and mash with butter and milk or cream. Season with salt, pepper, and a pinch of nutmeg to taste.
  8. Pour the meat mixture into a baking dish.
  9. Spread the mashed cauliflower evenly over the meat mixture.
  10. Bake in the preheated oven for 20-25 minutes, or until the cauliflower topping is golden brown.
  11. Remove bay leaf before serving.
