Korean-Inspired Chickpea & Potato Noodle Bowl
A flavorful Korean-inspired bowl with sweet potato noodles, spicy chickpeas, and tender potatoes in a savory sauce.
Ingredients
- 1 medium, diced Potatoes
- 1/2 cup, rinsed and drained Chickpeas
- 1 bundle Sweet Potato Noodles (Glass Noodles)
- 2 tbsp Soy Sauce (Gluten-Free)
- 1 tsp Sesame Oil
- 1 tsp Gochujang (Korean Chili Paste)
- 1 tsp Maple Syrup
- 1/2 tsp Rice Vinegar
- 1 clove, minced Garlic
- 1 tbsp, sliced Green Onion
- 1/2 tsp Sesame Seeds
Instructions
- Dice the potatoes and boil until just tender. Drain and set aside.
- Cook sweet potato noodles according to package directions. Drain, rinse with cold water to stop the cooking process, and set aside.
- In a small bowl, whisk together soy sauce, sesame oil, gochujang, maple syrup, rice vinegar and garlic.
- Add the potatoes, chickpeas, and noodles to the sauce. Toss to combine thoroughly.
- Garnish with sliced green onion and sesame seeds. Serve immediately for the best noodle texture.
