  1. Dice the potatoes and boil until just tender. Drain and set aside.
  2. Cook sweet potato noodles according to package directions. Drain, rinse with cold water to stop the cooking process, and set aside.
  3. In a small bowl, whisk together soy sauce, sesame oil, gochujang, maple syrup, rice vinegar and garlic.
  4. Add the potatoes, chickpeas, and noodles to the sauce. Toss to combine thoroughly.
  5. Garnish with sliced green onion and sesame seeds. Serve immediately for the best noodle texture.
