Broccoli & Tomato Pasta with Spicy Chorizo (Spanish)

  1. Cook pasta according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.
  2. Steam or blanch broccoli florets until tender-crisp.
  3. In a large skillet, heat olive oil over medium heat.
  4. Add chorizo and onion, and sauté until chorizo is browned and onion is softened.
  5. Add garlic and smoked paprika, and cook for another minute.
  6. Deglaze the pan with dry sherry or white wine, scraping up any browned bits from the bottom. Simmer for 1 minute.
  7. Add canned tomatoes, salt, and pepper. Simmer for 15 minutes, stirring occasionally, to allow the flavors to meld.
  8. Stir in cooked pasta and broccoli florets.
  9. Toss gently to combine, adding a little of the reserved pasta water if needed to create a smooth sauce.
  10. Serve immediately.
