Broccoli & Tomato Pasta with Spicy Chorizo (Spanish)
A Spanish-inspired pasta dish featuring spicy chorizo sausage, tomatoes, and broccoli for a flavourful and satisfying meal.
Ingredients
- 250g Pasta
- 398ml Canned Tomatoes
- 1 cup Broccoli Florets
- 150g, sliced Chorizo Sausage
- 1/2 medium, diced Onion
- 2 cloves, minced Garlic
- 2 tbsp Olive Oil
- 1 tsp Smoked Paprika
- 2 tbsp Dry Sherry or White Wine
- to taste Salt and Black Pepper
Instructions
- Cook pasta according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.
- Steam or blanch broccoli florets until tender-crisp.
- In a large skillet, heat olive oil over medium heat.
- Add chorizo and onion, and sauté until chorizo is browned and onion is softened.
- Add garlic and smoked paprika, and cook for another minute.
- Deglaze the pan with dry sherry or white wine, scraping up any browned bits from the bottom. Simmer for 1 minute.
- Add canned tomatoes, salt, and pepper. Simmer for 15 minutes, stirring occasionally, to allow the flavors to meld.
- Stir in cooked pasta and broccoli florets.
- Toss gently to combine, adding a little of the reserved pasta water if needed to create a smooth sauce.
- Serve immediately.
