Broccoli & Tomato Baked Salmon with Lemon-Dill Butter Sauce
Baked salmon fillets with tomatoes and broccoli, topped with a bright lemon-dill butter sauce.
Ingredients
- 1 cup Broccoli florets
- 1/2 cup Canned diced tomatoes
- 3 portions Steelhead Salmon Portions
- 1 Lemon
- 2 tbsp Fresh dill, chopped
- 4 tbsp Butter, unsalted
- 1 tbsp Olive oil
- 1/2 tsp Garlic powder
- To taste Salt and black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Place salmon portions on a baking sheet lined with parchment paper.
- Top with broccoli florets and diced tomatoes.
- Drizzle with olive oil and sprinkle with garlic powder, salt, and black pepper.
- Bake for 15-20 minutes, or until salmon is cooked through and flakes easily with a fork.
- While salmon is baking, prepare the lemon-dill butter sauce: In a small saucepan, melt butter over medium heat. Add lemon juice and chopped fresh dill. Stir until well combined.
- Serve salmon immediately with lemon-dill butter sauce spooned over the top.
