Broccoli, Tomato & Apple Quesadillas with Chipotle-Lime Crema
Flavorful quesadillas filled with sautéed broccoli, tomatoes, and diced apple, served with a zesty chipotle-lime crema.
Ingredients
- 1/4 head Broccoli florets
- Remaining tomatoes from the 28oz can Canned diced tomatoes
- 1 Large Gala Apples
- 6 Tortillas
- 1 cup Shredded Monterey Jack cheese
- 1 tbsp Olive oil
- 1/2 tsp Chili powder
- 1/4, diced Onion
- 1/2 cup Sour cream
- 1, minced Chipotle pepper in adobo sauce
- 1 tbsp Lime juice
- 2 tbsp, chopped Cilantro
Instructions
- Prepare the Chipotle-Lime Crema: In a small bowl, combine sour cream, minced chipotle pepper in adobo sauce, lime juice, and chopped cilantro. Mix well and set aside.
- Dice apple and broccoli into small pieces. Dice onion.
- Heat olive oil in a skillet over medium heat. Sauté onion until translucent, then add broccoli and diced apples and cook until tender-crisp, about 5-7 minutes.
- Stir in canned tomatoes and chili powder. Cook for 5 minutes, stirring occasionally.
- Warm a skillet over medium heat. Place tortillas on a flat surface. Sprinkle Monterey Jack cheese on one half of each tortilla.
- Spoon the broccoli and tomato mixture over the cheese.
- Fold the tortillas in half and cook in the skillet for 3-4 minutes per side, until golden brown and the cheese is melted and gooey.
- Cut each quesadilla into wedges and serve immediately with chipotle-lime crema on the side.
