  1. Prepare the Chipotle-Lime Crema: In a small bowl, combine sour cream, minced chipotle pepper in adobo sauce, lime juice, and chopped cilantro. Mix well and set aside.
  2. Dice apple and broccoli into small pieces. Dice onion.
  3. Heat olive oil in a skillet over medium heat. Sauté onion until translucent, then add broccoli and diced apples and cook until tender-crisp, about 5-7 minutes.
  4. Stir in canned tomatoes and chili powder. Cook for 5 minutes, stirring occasionally.
  5. Warm a skillet over medium heat. Place tortillas on a flat surface. Sprinkle Monterey Jack cheese on one half of each tortilla.
  6. Spoon the broccoli and tomato mixture over the cheese.
  7. Fold the tortillas in half and cook in the skillet for 3-4 minutes per side, until golden brown and the cheese is melted and gooey.
  8. Cut each quesadilla into wedges and serve immediately with chipotle-lime crema on the side.
