Broccoli & Black Bean Taco Fiesta with Chipotle Crema
A flavorful Mexican-inspired taco night featuring broccoli and black bean filling seasoned with taco spices, topped with a zesty chipotle crema.
Ingredients
- 398ml, drained and rinsed Organic Black Beans
- 1.5 cup, finely chopped Broccoli Florets
- 0.5, diced Yellow Onions
- 2 tbsp Taco Seasoning
- 6 Taco Shells
- 1/4 cup Sour Cream
- 1, minced Chipotle Peppers in Adobo Sauce
- 1 tbsp Lime Juice
- to serve, chopped Cilantro
Instructions
- Heat a skillet over medium heat.
- Add diced yellow onions and cook until softened, about 5 minutes.
- Add finely chopped broccoli florets and cook until tender-crisp, about 5-7 minutes.
- Stir in organic black beans and taco seasoning.
- Heat through, stirring occasionally.
- In a small bowl, combine sour cream, minced chipotle pepper, and lime juice. Mix well to create the chipotle crema.
- Warm taco shells according to package directions.
- Fill each taco shell with the broccoli and black bean mixture.
- Drizzle with chipotle crema.
- Garnish with chopped cilantro.
- Serve immediately.
