  2. Prepare the apples: Peel, core, and dice the apple. In a skillet, melt 1 tbsp of butter over medium heat. Add the diced apple, brown sugar, and cinnamon. Cook until the apples are softened and caramelized, about 5-7 minutes. Remove from heat.
  3. Slice the croissants in half horizontally.
  4. Spread a layer of brie on the bottom half of each croissant.
  5. Top the brie with the caramelized apples.
  6. Drizzle with maple syrup and top with the remaining butter.
  7. Place the top half of the croissants on top.
  8. Bake for 20-25 minutes, or until golden brown and the brie is melted and bubbly. If the croissants start to brown too quickly, cover them loosely with foil.
  9. Let cool slightly before serving. Serve warm.
