Chinese Stir-Fried Noodles with Tofu and Peanut Sauce
Flavorful and satisfying stir-fried rice noodles with crispy tofu, vegetables, and a rich peanut sauce.
Ingredients
- 100 g Rice Noodles
- 1/2 cup Extra Firm Tofu, cubed
- 1/2 cup Broccoli Florets
- 1/2 cup Bell Pepper, sliced
- 1 tbsp Soy Sauce (Gluten-Free)
- 1 tbsp Peanut Butter
- 1 tsp Maple Syrup
- 1 tsp Rice Vinegar
- 1 tsp Sesame Oil
- 1/2 tsp Ginger, grated
- 1 clove Garlic, minced
- to taste Red Pepper Flakes
Instructions
- Cook rice noodles according to package directions, then rinse under cold water to prevent sticking. Set aside.
- Press extra firm tofu to remove excess water. Cube the tofu.
- Stir-fry tofu in a hot pan with a little oil until golden brown and crispy. Remove from pan and set aside.
- In the same pan, stir-fry broccoli florets and bell pepper until tender-crisp, about 5 minutes.
- In a small bowl, whisk together gluten-free soy sauce, peanut butter, maple syrup, rice vinegar, sesame oil, grated ginger, minced garlic, and red pepper flakes.
- Add cooked rice noodles, stir-fried vegetables, and crispy tofu to the pan.
- Pour the peanut sauce over the noodles and toss to combine, ensuring everything is well coated.
- Stir-fry for another 2-3 minutes until heated through and flavors have melded.
- Serve hot, garnished with extra red pepper flakes or chopped green onions, if desired.
