  1. Cook rice noodles according to package directions, then rinse under cold water to prevent sticking. Set aside.
  2. Press extra firm tofu to remove excess water. Cube the tofu.
  3. Stir-fry tofu in a hot pan with a little oil until golden brown and crispy. Remove from pan and set aside.
  4. In the same pan, stir-fry broccoli florets and bell pepper until tender-crisp, about 5 minutes.
  5. In a small bowl, whisk together gluten-free soy sauce, peanut butter, maple syrup, rice vinegar, sesame oil, grated ginger, minced garlic, and red pepper flakes.
  6. Add cooked rice noodles, stir-fried vegetables, and crispy tofu to the pan.
  7. Pour the peanut sauce over the noodles and toss to combine, ensuring everything is well coated.
  8. Stir-fry for another 2-3 minutes until heated through and flavors have melded.
  9. Serve hot, garnished with extra red pepper flakes or chopped green onions, if desired.
