Gourmet Canadian Bacon & Apple Hash with Fried Duck Egg
Ingredients
- 6 slices Western Family Thick Cut Bacon (Applewood Smoked)
- 1 large Cosmic Crisp Apples
- 1.5 cups diced Yukon Gold potatoes
- 1/2 medium, diced Sweet onion
- 2 Duck eggs
- 1 tablespoon Pure maple syrup (Grade A Dark)
- 1 teaspoon, chopped Fresh thyme leaves
- Pinch Smoked paprika
- To taste Salt and freshly ground black pepper
- 1 tablespoon Duck fat or olive oil
- 1 tablespoon, chopped (for garnish) Fresh parsley
Instructions
- Dice the bacon and cook in a cast-iron skillet over medium heat until deeply crispy. Remove the bacon with a slotted spoon and set aside, reserving the bacon fat in the skillet. Applewood smoked bacon will add a deeper, smokier flavour.
- Dice the potatoes and onion. Add them to the skillet with the reserved bacon fat. Cook until the potatoes are tender and develop a golden-brown crust, about 15-20 minutes. Stir occasionally to ensure even cooking.
- While the potatoes are cooking, core and dice the apple. Add the diced apple and cooked bacon to the skillet. Stir in the maple syrup, thyme leaves, and a pinch of smoked paprika. Cook for another 5 minutes until the apples are slightly softened and the flavors have melded together.
- In a separate pan, gently fry the duck eggs in duck fat or olive oil. Cook until the whites are set and the yolks are still runny. Duck eggs add richness.
- Season the hash with salt and freshly ground black pepper to taste.
- Spoon the hash onto plates and top each serving with a fried duck egg. Garnish with fresh parsley for a pop of color and freshness.
