Mushroom and Spinach Pasta with Garlic Bread
A comforting and flavorful pasta dish with mushrooms, spinach, and a creamy garlic sauce, served with garlic bread.
Ingredients
- 300 g Italpasta
- 2 cups, sliced Cremini Mushrooms
- 1 cup, sliced PC Whole White Mushrooms
- 1/4 cup, chopped Cilantro
- 4 cloves, minced Garlic
- 3 tbsp Olive Oil
- 1/2 cup Sour Cream
- 1/4 cup, grated Parmesan Cheese
- 6 slices D'Italiano Bread
- 2 tbsp, softened Butter
- 5 oz Spinach
- 1/4 tsp Red Pepper Flakes
- 1 tsp, chopped (optional) Fresh Thyme
Instructions
- Cook pasta according to package directions in salted water. Reserve about 1/2 cup of pasta water before draining.
- While pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add minced garlic and red pepper flakes and cook for 30 seconds until fragrant, being careful not to burn the garlic.
- Add sliced mushrooms and fresh thyme if using; cook until softened and browned, about 7-10 minutes. Season with salt and pepper.
- Add spinach and cook until wilted, about 2 minutes.
- Drain pasta, reserving pasta water, and add it to the skillet with the mushrooms and spinach.
- Stir in sour cream and grated Parmesan cheese. Add a little pasta water at a time until sauce reaches desired consistency. Taste and adjust seasoning.
- For the garlic bread, mix softened butter with minced garlic. Spread on bread slices and bake in a preheated oven at 350°F (175°C) for 5-7 minutes, or until golden brown.
- Serve pasta hot, garnished with chopped cilantro, and with garlic bread.
