Mushroom and Spinach Pasta with Garlic Bread

  1. Cook pasta according to package directions in salted water. Reserve about 1/2 cup of pasta water before draining.
  2. While pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and red pepper flakes and cook for 30 seconds until fragrant, being careful not to burn the garlic.
  4. Add sliced mushrooms and fresh thyme if using; cook until softened and browned, about 7-10 minutes. Season with salt and pepper.
  5. Add spinach and cook until wilted, about 2 minutes.
  6. Drain pasta, reserving pasta water, and add it to the skillet with the mushrooms and spinach.
  7. Stir in sour cream and grated Parmesan cheese. Add a little pasta water at a time until sauce reaches desired consistency. Taste and adjust seasoning.
  8. For the garlic bread, mix softened butter with minced garlic. Spread on bread slices and bake in a preheated oven at 350°F (175°C) for 5-7 minutes, or until golden brown.
  9. Serve pasta hot, garnished with chopped cilantro, and with garlic bread.
