Spicy Breakfast Potato Hash with Lentils
A hearty and flavorful potato hash with lentils and aromatic Indian spices, perfect for a filling vegan breakfast.
Ingredients
- 2 medium, diced Russet Potatoes
- 1/2 cup cooked Lentils
- 2 cloves, minced Garlic
- 1/2 tsp each Seasonings (Garam Masala, Turmeric, Cumin)
- 2 tbsp Oil
- Few Curry Leaves
- 1/4 tsp Mustard Seeds
Instructions
- Boil potatoes until tender. Dice into small cubes.
- Heat the oil in a pan over medium heat. Add mustard seeds and curry leaves. Allow mustard seeds to crackle (add to hot oil) and curry leaves to sizzle.
- Add minced garlic and sauté until it turns light golden.
- Add potatoes and cooked lentils. Season with garam masala, turmeric, cumin, and salt.
- Cook until potatoes are golden brown and slightly crispy. Serve hot.
