Mediterranean Quinoa Bowl
A healthy and flavorful bowl featuring quinoa, hummus, sun-dried tomatoes, Kalamata olives, and fresh parsley.
Ingredients
- 1/2 cup Quinoa
- 1 cup Water
- 2 tbsp Hummus
- 2 tbsp, chopped Sun-Dried Tomatoes
- 1 tbsp, sliced Kalamata Olives
- 1 tbsp, chopped Fresh Parsley
- 1 tsp Lemon Juice
- 1 tsp Olive Oil
- Pinch Salt
- Pinch Black Pepper
- 1/4 tsp Garlic Powder
- 1/4 cup, diced Cucumber
Instructions
- Rinse quinoa in a fine-mesh sieve.
- Combine quinoa and water in a saucepan. Bring to a boil, then reduce heat and simmer for 15 minutes, or until water is absorbed.
- Fluff quinoa with a fork.
- In a bowl, combine cooked quinoa, hummus, sun-dried tomatoes, Kalamata olives, fresh parsley and cucumber.
- Drizzle with lemon juice and olive oil.
- Season with salt, pepper, and garlic powder to taste.
- Serve warm or cold.
