  1. Rinse quinoa in a fine-mesh sieve.
  2. Combine quinoa and water in a saucepan. Bring to a boil, then reduce heat and simmer for 15 minutes, or until water is absorbed.
  3. Fluff quinoa with a fork.
  4. In a bowl, combine cooked quinoa, hummus, sun-dried tomatoes, Kalamata olives, fresh parsley and cucumber.
  5. Drizzle with lemon juice and olive oil.
  6. Season with salt, pepper, and garlic powder to taste.
  7. Serve warm or cold.
