  1. Heat oil in a heavy-bottomed pan or wok. Add mustard seeds and a pinch of asafoetida (hing). Let the mustard seeds splutter.
  2. Add chopped onions and green pepper and saute until golden brown.
  3. Add chopped cauliflower and potatoes and saute for 5 minutes. Ensure the vegetables are evenly coated with the oil and spices.
  4. Add turmeric powder, red chili powder (if using), and salt. Mix well.
  5. Add bread cubes and mix gently until well combined, ensuring the bread doesn’t get soggy.
  6. Cover and cook for 5-7 minutes until the vegetables are tender and the bread is slightly crisp. Stir occasionally to prevent sticking.
  7. Finish with a squeeze of lemon juice and garnish with chopped cilantro. Serve hot.
