Masala Vegetable and Bread Upma
A savory Indian breakfast dish made with bread, cauliflower, and a medley of vegetables, tempered with aromatic spices.
Ingredients
- 6 slices, cubed Bread
- 1/2 medium head, finely chopped Cauliflower
- 1 medium, finely chopped Onion
- 1/2 medium, finely chopped Green Pepper
- 1 medium, finely chopped Potatoes
- 1 tsp Mustard Seeds
- 10-12 fresh Curry Leaves
- 1/2 tsp Turmeric Powder
- 1/4 tsp (optional) Red Chili Powder
- Pinch Asafoetida (hing)
- to taste Salt
- 2 tbsp Vegetable Oil
- 2 tbsp, chopped Cilantro
- 1 tsp Lemon juice
Instructions
- Heat oil in a heavy-bottomed pan or wok. Add mustard seeds and a pinch of asafoetida (hing). Let the mustard seeds splutter.
- Add chopped onions and green pepper and saute until golden brown.
- Add chopped cauliflower and potatoes and saute for 5 minutes. Ensure the vegetables are evenly coated with the oil and spices.
- Add turmeric powder, red chili powder (if using), and salt. Mix well.
- Add bread cubes and mix gently until well combined, ensuring the bread doesn’t get soggy.
- Cover and cook for 5-7 minutes until the vegetables are tender and the bread is slightly crisp. Stir occasionally to prevent sticking.
- Finish with a squeeze of lemon juice and garnish with chopped cilantro. Serve hot.
