Vegetable and Paneer Kathi Roll
Indian-style wraps filled with sautéed vegetables and paneer.

- In a bowl, marinate the paneer cubes with a pinch of turmeric, red chili powder, and salt. Set aside.
- Heat oil or ghee in a pan. Add sliced onions and sauté until golden brown.
- Add sliced bell peppers and marinated paneer. Sauté for 5-7 minutes until the paneer is lightly browned.
- Add garam masala, coriander powder, amchur, Kasuri Methi (crush it between your palms before adding), and salt. Mix well and sauté for another 2-3 minutes.
- Stir in lemon juice and mix well. Remove from heat.
- Warm tortillas or roti on a griddle.
- Spread mint chutney or tamarind chutney on the tortilla, fill with the vegetable and paneer mixture, and roll tightly.
- Secure the roll with a toothpick or wrap in parchment paper before serving.
