Vegetable and Paneer Kathi Roll

  1. In a bowl, marinate the paneer cubes with a pinch of turmeric, red chili powder, and salt. Set aside.
  2. Heat oil or ghee in a pan. Add sliced onions and sauté until golden brown.
  3. Add sliced bell peppers and marinated paneer. Sauté for 5-7 minutes until the paneer is lightly browned.
  4. Add garam masala, coriander powder, amchur, Kasuri Methi (crush it between your palms before adding), and salt. Mix well and sauté for another 2-3 minutes.
  5. Stir in lemon juice and mix well. Remove from heat.
  6. Warm tortillas or roti on a griddle.
  7. Spread mint chutney or tamarind chutney on the tortilla, fill with the vegetable and paneer mixture, and roll tightly.
  8. Secure the roll with a toothpick or wrap in parchment paper before serving.
