Cheesy Veggie Quesadillas
Quick and easy quesadillas filled with sauteed vegetables and melted cheese.
Ingredients
- 1 lb Sweet Peppers (Red, Orange, Yellow)
- 1/2 cup, chopped Yellow Onions
- 1 cup, sliced Cremini Mushrooms
- 2 packages Sliced Meat
- 6 Flour Tortillas
- 1 tbsp Olive Oil
- 2 cups Tex Mex Shredded Cheese
- 1 tsp Chili Powder
- 1/2 tsp Cumin
- 2 tbsp, chopped (optional) Cilantro
Instructions
- Heat olive oil in a large skillet over medium-high heat. This higher heat helps to caramelize the vegetables.
- Add chopped onions and peppers, and sauté until they begin to soften and caramelize, about 5 minutes. Add sliced mushrooms and continue to sauté until all vegetables are tender and slightly browned, about 5 more minutes.
- Stir in sliced meat, chili powder, and cumin. Cook for 1-2 minutes to heat through and allow the spices to bloom.
- Warm tortillas in a dry skillet or microwave for pliability.
- Sprinkle shredded cheese evenly over each tortilla, then top with the sautéed vegetable mixture. Sprinkle cilantro.
- Fold the tortillas in half and cook in the skillet over medium heat until golden brown and the cheese is melted, about 3-4 minutes per side. Press down gently with a spatula to ensure even cooking and melting.
- Cut each quesadilla into wedges and serve immediately. Serve with your favorite salsa or sour cream.
