  1. Heat olive oil in a large skillet over medium-high heat. This higher heat helps to caramelize the vegetables.
  2. Add chopped onions and peppers, and sauté until they begin to soften and caramelize, about 5 minutes. Add sliced mushrooms and continue to sauté until all vegetables are tender and slightly browned, about 5 more minutes.
  3. Stir in sliced meat, chili powder, and cumin. Cook for 1-2 minutes to heat through and allow the spices to bloom.
  4. Warm tortillas in a dry skillet or microwave for pliability.
  5. Sprinkle shredded cheese evenly over each tortilla, then top with the sautéed vegetable mixture. Sprinkle cilantro.
  6. Fold the tortillas in half and cook in the skillet over medium heat until golden brown and the cheese is melted, about 3-4 minutes per side. Press down gently with a spatula to ensure even cooking and melting.
  7. Cut each quesadilla into wedges and serve immediately. Serve with your favorite salsa or sour cream.
