Lemon-Dill Chickpea 'Tuna' Salad Lettuce Wraps
A dairy-free, gluten-free, and vegetarian twist on tuna salad, using chickpeas, lemon, and fresh dill, served in crisp lettuce cups.
Ingredients
- 1 cup Chickpeas
- 2 tbsp Lemon Juice
- 2 tbsp Fresh Dill
- 1/4 cup, finely diced Celery
- 1/8 cup, finely diced Red Onion
- 2 tbsp Dairy-Free Mayonnaise
- 4 large leaves Lettuce Cups
- 1/4 tsp Salt
- 1/8 tsp Black Pepper
- 1/4 tsp Garlic Powder
Instructions
- Drain and rinse the chickpeas. Mash lightly with a fork, leaving some texture.
- In a bowl, combine the mashed chickpeas, lemon juice, chopped dill, diced celery, and red onion.
- Add dairy-free mayonnaise, salt, black pepper, and garlic powder.
- Mix well to combine all ingredients.
- Spoon the chickpea mixture into the lettuce cups.
- Serve immediately.
