Spicy Chicken & Black Bean Quesadilla

  1. Dice the chicken breast into small pieces.
  2. In a bowl, mix chicken with chili powder, cumin and garlic powder.
  3. Heat a small amount of oil in a pan over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Ensure the internal temperature reaches 165°F (74°C).
  4. Remove chicken from pan. Deglaze the pan with the lime juice to capture browned bits and add additional flavor. Return chicken to pan and coat with the lime mixture
  5. Warm tortilla in a dry pan or microwave.
  6. Sprinkle half of the tortilla with cheese, then add cooked chicken and black beans. Top with salsa.
  7. Fold the tortilla in half and cook in a lightly oiled pan over medium heat until golden brown and the cheese is melted (about 2-3 minutes per side).
  8. Serve hot.
