Spicy Chicken & Black Bean Quesadilla
A protein-packed quesadilla with seasoned chicken, black beans, and melted cheese, perfect for a quick and satisfying lunch.
Ingredients
- 150g Chicken Breast
- 1/2 cup Black Beans, drained and rinsed
- 2 slices Natural Cheese Slices
- 2 tbsp Salsa
- 1/2 tsp Chili Powder
- 1/4 tsp Cumin
- 1 Large Tortilla
- 1 tsp Lime Juice
- 1/4 tsp Garlic powder
Instructions
- Dice the chicken breast into small pieces.
- In a bowl, mix chicken with chili powder, cumin and garlic powder.
- Heat a small amount of oil in a pan over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Ensure the internal temperature reaches 165°F (74°C).
- Remove chicken from pan. Deglaze the pan with the lime juice to capture browned bits and add additional flavor. Return chicken to pan and coat with the lime mixture
- Warm tortilla in a dry pan or microwave.
- Sprinkle half of the tortilla with cheese, then add cooked chicken and black beans. Top with salsa.
- Fold the tortilla in half and cook in a lightly oiled pan over medium heat until golden brown and the cheese is melted (about 2-3 minutes per side).
- Serve hot.
