Chicken Breast with Roasted Garlic Potatoes & Peppers

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, toss potatoes, peppers, onions, and garlic with 2 tbsp olive oil, Italian seasoning, salt, and pepper.
  3. Spread vegetables in a single layer on a baking sheet.
  4. In a separate small bowl, whisk together remaining 1 tbsp olive oil, lemon juice, salt, pepper, and rosemary (if using).
  5. Pat chicken breasts dry with paper towels. Place on the same baking sheet as the vegetables.
  6. Brush chicken breasts with the lemon-herb mixture.
  7. Bake for 25-30 minutes, or until chicken is cooked through (internal temperature of 165°F or 74°C) and vegetables are tender and slightly caramelized.
  8. Let chicken rest for 5 minutes before slicing. Serve hot with roasted vegetables.
