Chicken Breast with Roasted Garlic Potatoes & Peppers
Ingredients
- 3 medium (about 6 oz each) Chicken Breast
- 2 medium, cubed Potatoes
- 1 medium, chopped Peppers
- 1/2 medium, chopped Onions
- 4 cloves, minced Garlic
- 3 tbsp Olive Oil
- 1 tsp Italian Seasoning
- 1 tbsp Lemon Juice
- to taste Salt and Black Pepper
- 1 sprig, chopped (optional) Fresh Rosemary
Instructions
- Preheat oven to 425°F (220°C).
- In a large bowl, toss potatoes, peppers, onions, and garlic with 2 tbsp olive oil, Italian seasoning, salt, and pepper.
- Spread vegetables in a single layer on a baking sheet.
- In a separate small bowl, whisk together remaining 1 tbsp olive oil, lemon juice, salt, pepper, and rosemary (if using).
- Pat chicken breasts dry with paper towels. Place on the same baking sheet as the vegetables.
- Brush chicken breasts with the lemon-herb mixture.
- Bake for 25-30 minutes, or until chicken is cooked through (internal temperature of 165°F or 74°C) and vegetables are tender and slightly caramelized.
- Let chicken rest for 5 minutes before slicing. Serve hot with roasted vegetables.
