  2. Add onion, carrot, and celery and cook until softened, about 5 minutes.

  4. Stir in white beans, vegetable broth, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for at least 20 minutes to allow flavors to meld.
  6. Remove bay leaf. Add kale and cook until wilted, about 5 minutes.
  7. Season with salt and pepper to taste. Add a squeeze of lemon juice for brightness before serving.
