Italian White Bean and Kale Soup
A hearty and flavorful soup with white beans, kale, and vegetable broth, perfect for a chilly day.
Ingredients
- 1 tbsp Extra Virgin Olive Oil
- 1/2 cup Onion, diced
- 1/2 cup Carrot, diced
- 1/2 cup Celery, diced
- 2 cloves Garlic, minced
- 1 can Canned White Beans (Cannellini), drained and rinsed
- 2 cups Vegetable Broth
- 2 cups Kale, chopped
- 1/4 tsp Dried Thyme
- 1 Bay Leaf
- to taste Salt
- to taste Freshly Ground Black Pepper
- to taste Lemon Juice, to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion, carrot, and celery and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in white beans, vegetable broth, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for at least 20 minutes to allow flavors to meld.
- Remove bay leaf. Add kale and cook until wilted, about 5 minutes.
- Season with salt and pepper to taste. Add a squeeze of lemon juice for brightness before serving.
