Instructions

  1. Cut potatoes into small pieces and microwave for 5 minutes.
  2. Add potatoes to pot with water and boil until soft.
  3. Saute spinach and onion until wilted.
  4. Strain potatoes and add to pan with spinach and onion.
  5. Add Seasonings and cook until heated through.
  6. Serve potato and spinach curry inside tortilla wrap.
  7. Serve immediately.
