  1. Heat oil (or ghee for a richer flavor) in a heavy-bottomed pan over medium heat. Add finely chopped onion and sauté until golden brown.
  2. Add ginger garlic paste and sauté for another minute until fragrant.
  3. Add finely chopped tomatoes and cook until they soften and the raw smell disappears. This may take 5-7 minutes. Stir occasionally to prevent sticking.
  4. Add drained and rinsed chickpeas to the pan.
  5. Add garam masala, chili powder (or cayenne), turmeric powder, cumin powder, coriander powder, amchoor (if using), and salt. Mix well, ensuring the chickpeas are coated with the spices.
  6. Add 1/2 cup of water, cover the pan, and simmer for 15-20 minutes, stirring occasionally, until the chickpeas are tender and the sauce has thickened. Mash some of the chickpeas for a creamier texture.
  7. Stir in fresh cilantro.
  8. Warm the corn tortillas or naan bread.
  9. Fill each tortilla with chana masala, chopped salad kit (if using), and chopped apple (if using).
  10. Wrap and serve immediately.
