Chicken Tikka Skewers with Cauliflower Rice
Lean chicken marinated in tikka spices, grilled and served with low-carb cauliflower rice.
Ingredients
- 1 lb, cut into 1-inch cubes Chicken Breast
- 1/2 cup Low Fat Yogurt
- 1 tbsp Ginger-Garlic Paste
- 2 tsp Tikka Masala
- 1 tbsp Lemon Juice
- 1/2 head, riced Cauliflower
- 1/2 cup Green Peas
- 1/4 cup Low Sodium Broth
- 1/4 tsp Turmeric Powder
- 1/4 tsp Cumin Powder
Instructions
- In a bowl, marinate chicken cubes with low fat Yogurt, ginger-garlic paste, Tikka Masala seasoning, Turmeric Powder and Cumin Powder, and lemon juice. Ensure chicken is fully coated. Let it marinate in the refrigerator for at least 2 hours, or overnight for better flavor.
- Preheat grill to medium-high heat.
- Thread the marinated chicken onto skewers.
- Grill the skewers, turning occasionally, until the chicken is cooked through and slightly charred (about 8-12 minutes). Ensure internal temperature reaches 165°F (74°C).
- While chicken is grilling, sauté cauliflower rice with green peas in a pan with a little low sodium broth until tender (about 5-7 minutes).
- Serve the chicken tikka skewers hot over the cauliflower rice. Garnish with fresh cilantro, if desired.
