Chicken Tikka Skewers with Cauliflower Rice

Ingredients

  1. In a bowl, marinate chicken cubes with low fat Yogurt, ginger-garlic paste, Tikka Masala seasoning, Turmeric Powder and Cumin Powder, and lemon juice. Ensure chicken is fully coated. Let it marinate in the refrigerator for at least 2 hours, or overnight for better flavor.
  2. Preheat grill to medium-high heat.
  3. Thread the marinated chicken onto skewers.
  4. Grill the skewers, turning occasionally, until the chicken is cooked through and slightly charred (about 8-12 minutes). Ensure internal temperature reaches 165°F (74°C).
  5. While chicken is grilling, sauté cauliflower rice with green peas in a pan with a little low sodium broth until tender (about 5-7 minutes).
  6. Serve the chicken tikka skewers hot over the cauliflower rice. Garnish with fresh cilantro, if desired.
