Mediterranean Chickpea and Potato Patties with Tomato Relish
Flavorful chickpea and potato patties seasoned with Mediterranean herbs, served with a fresh tomato relish.
Ingredients
- 1 medium Potatoes
- 1/2 cup, cooked Chickpeas
- 1/2 medium, diced (for relish) Tomatoes
- 1/4 medium, finely chopped Red onion
- 2 tbsp, chopped Fresh parsley
- 1 tbsp, chopped Fresh mint
- 1 tbsp Lemon juice
- 2 tbsp Olive oil
- 1 clove, minced Garlic
- 1/4 tsp Cumin
- To taste Salt
- To taste Black pepper
Instructions
- Boil potato until very tender. Drain well, then mash.
- In a bowl, combine mashed potato, chickpeas, red onion, parsley, mint, lemon juice, 1 tbsp olive oil, minced garlic, cumin, salt, and pepper.
- Form the mixture into small, tightly packed patties.
- Heat remaining 1 tbsp olive oil in a non-stick pan over medium heat. Cook patties until golden brown and crispy on both sides, about 5-7 minutes per side.
- For the relish, combine diced tomatoes, red onion, chopped parsley, and a squeeze of lemon juice. Season with salt and pepper.
- Serve patties hot, topped with fresh tomato relish.
