  1. Boil potato until very tender. Drain well, then mash.
  2. In a bowl, combine mashed potato, chickpeas, red onion, parsley, mint, lemon juice, 1 tbsp olive oil, minced garlic, cumin, salt, and pepper.
  3. Form the mixture into small, tightly packed patties.
  4. Heat remaining 1 tbsp olive oil in a non-stick pan over medium heat. Cook patties until golden brown and crispy on both sides, about 5-7 minutes per side.
  5. For the relish, combine diced tomatoes, red onion, chopped parsley, and a squeeze of lemon juice. Season with salt and pepper.
  6. Serve patties hot, topped with fresh tomato relish.
