Canadian Inspired Lentil Soup
A hearty lentil soup with vegetables and maple syrup for a touch of sweetness.
Ingredients
- 1/2 cup, rinsed Green Lentils
- 2 cups Low-Sodium Vegetable Broth
- 1/4 cup, diced Carrot
- 1/4 cup, diced Celery
- 1/4 cup, diced Yellow Onion
- 1 tsp Pure Maple Syrup
- 1/2 tsp Dried Thyme
- 1 Bay Leaf
Instructions
- Rinse lentils thoroughly.
- In a pot, sauté yellow onion, carrot, and celery until softened, about 5 minutes.
- Add rinsed green lentils and low-sodium vegetable broth.
- Bring to a boil, then reduce heat, add bay leaf, and simmer for 25 minutes, or until lentils are tender.
- Remove bay leaf.
- Stir in pure maple syrup and dried thyme.
- Season with salt and pepper to taste.
- Serve hot with a side of crusty gluten-free bread, if desired.
