  1. Rinse lentils thoroughly.
  2. In a pot, sauté yellow onion, carrot, and celery until softened, about 5 minutes.
  3. Add rinsed green lentils and low-sodium vegetable broth.
  4. Bring to a boil, then reduce heat, add bay leaf, and simmer for 25 minutes, or until lentils are tender.
  5. Remove bay leaf.
  6. Stir in pure maple syrup and dried thyme.
  7. Season with salt and pepper to taste.
  8. Serve hot with a side of crusty gluten-free bread, if desired.
