Masala Oats Upma
A savory and healthy breakfast made with oats and Indian spices.
Ingredients
- 1 cup Rolled Oats
- 1/2 medium, finely chopped Onion
- 1/4 cup, finely chopped Carrot
- 1/4 medium, finely chopped Green Bell Pepper
- 1/2 tsp Turmeric Powder
- 1/4 tsp Red Chili Powder
- 1/4 tsp Garam Masala
- 1/2 tsp Mustard Seeds
- 1/4 tsp Cumin Seeds
- 8-10 Curry Leaves
- 1 tbsp Vegetable Oil
- 2 cups Water
- 1 tsp Lemon Juice
- to taste Salt
Instructions
- Dry roast the rolled oats in a pan over medium heat for 3-4 minutes until slightly fragrant and crisp. Set aside.
- Heat vegetable oil in a pan. Add mustard seeds and cumin seeds. Let them splutter.
- Add curry leaves and sauté for a few seconds until fragrant.
- Add finely chopped onion and sauté until golden brown.
- Add finely chopped carrot and green bell pepper. Sauté for 2-3 minutes until slightly softened.
- Add turmeric powder, red chili powder, and garam masala. Sauté for 30 seconds until fragrant.
- Add 2 cups of water and salt to taste. Bring to a boil.
- Reduce heat to low and gradually add the roasted oats to the boiling water, stirring continuously to avoid lumps.
- Cook for 5-7 minutes, or until the oats have absorbed the water and reached a soft, upma-like consistency. Stir occasionally to prevent sticking.
- Stir in lemon juice.
- Serve hot, garnished with fresh cilantro if desired.
