Mediterranean Quinoa Salad
An improved refreshing salad with quinoa, a mix of fresh vegetables, and a vibrant lemon-herb vinaigrette.
Ingredients
- 1 cup Quinoa
- 1/2 cup Cucumber, diced
- 1/2 cup Tomatoes, diced
- 1/4 cup Red Onion, finely chopped
- 1/4 cup Kalamata Olives, pitted and halved
- 2 tbsp Fresh Parsley, chopped
- 1 tbsp Fresh Mint, chopped
- 2 tbsp Lemon Juice
- 2 tbsp Olive Oil
- 1/2 tsp Garlic, minced
- 1/4 tsp Dried Oregano
- to taste Salt and Pepper
Instructions
- Cook quinoa according to package directions. Let cool slightly.
- In a large bowl, combine cooked quinoa, cucumber, tomatoes, red onion, and olives.
- Add fresh parsley and mint to the bowl
- In a small bowl, whisk together lemon juice, olive oil, minced garlic, dried oregano, salt, and pepper.
- Pour dressing over salad and toss gently to combine.
- Taste and adjust seasonings as needed.
- Serve chilled or at room temperature.
