  1. Cook quinoa according to package directions. Let cool slightly.
  2. In a large bowl, combine cooked quinoa, cucumber, tomatoes, red onion, and olives.
  3. Add fresh parsley and mint to the bowl
  4. In a small bowl, whisk together lemon juice, olive oil, minced garlic, dried oregano, salt, and pepper.
  5. Pour dressing over salad and toss gently to combine.
  6. Taste and adjust seasonings as needed.
  7. Serve chilled or at room temperature.
