  1. Ensure the cooked rice is cold and slightly dried out for best results in fried rice.
  2. Heat sesame oil in a large skillet or wok over medium-high heat.
  3. Add the eggs and scramble quickly, breaking them into small pieces. Set aside.
  4. Add diced bell peppers and cook until slightly tender.
  5. Add chopped spinach and cook until wilted.
  6. Add cooked rice to the skillet. Break up any clumps with a spatula.
  7. Pour soy sauce over the rice and stir-fry until well combined and heated through. For an extra layer of flavor, add a dash of sesame oil at this stage.
  8. Stir in garlic powder and ginger powder and scrambled eggs.
  9. Garnish with sliced green onions.
  10. Serve hot. Consider adding a drizzle of sriracha or a sprinkle of sesame seeds for added flavor.
