Spinach, Bell Pepper, and Egg Fried Rice
A quick and tasty vegetarian meal featuring fried rice with spinach, bell peppers, and eggs.
Ingredients
- 2 Eggs
- 1 cup, chopped Spinach
- 1/2 cup, diced Mini Bell Peppers
- 2 cups Cooked Rice
- 2 tbsp Soy Sauce
- 1 tsp Sesame Oil
- 2, sliced Green Onions
- 1/2 tsp Garlic Powder
- 1/4 tsp Ginger Powder
Instructions
- Ensure the cooked rice is cold and slightly dried out for best results in fried rice.
- Heat sesame oil in a large skillet or wok over medium-high heat.
- Add the eggs and scramble quickly, breaking them into small pieces. Set aside.
- Add diced bell peppers and cook until slightly tender.
- Add chopped spinach and cook until wilted.
- Add cooked rice to the skillet. Break up any clumps with a spatula.
- Pour soy sauce over the rice and stir-fry until well combined and heated through. For an extra layer of flavor, add a dash of sesame oil at this stage.
- Stir in garlic powder and ginger powder and scrambled eggs.
- Garnish with sliced green onions.
- Serve hot. Consider adding a drizzle of sriracha or a sprinkle of sesame seeds for added flavor.
