Mediterranean Tomato & Potato Salad
Refreshing Mediterranean-inspired salad with potatoes, tomatoes, herbs, and a lemon vinaigrette.
Ingredients
- 1 medium, red potatoes recommended Potatoes
- 1 medium, assorted heirloom tomatoes for best flavor Tomatoes
- 2 tbsp, good quality Extra virgin olive oil
- 1 tbsp, fresh Lemon juice
- 1 tbsp chopped, chiffonade cut Fresh basil
- 5-6, pitted and halved Kalamata olives
- 1/4 small, thinly sliced Red onion
- to taste, sea salt preferred Salt
- to taste, freshly ground Black pepper
Instructions
- Boil potatoes until tender but firm. Let cool completely and dice into bite-sized pieces.
- Dice tomatoes into similar-sized pieces. Chop fresh basil using a chiffonade cut (roll leaves tightly and slice thinly).
- Thinly slice red onion.
- In a bowl, gently combine potatoes, tomatoes, basil, Kalamata olives, and red onion.
- In a separate small bowl, whisk together extra virgin olive oil, lemon juice, salt, and freshly ground black pepper to make the vinaigrette.
- Pour vinaigrette over the salad and toss gently to coat. Let the salad sit for about 10-15 minutes before serving to allow the flavors to meld. Serve chilled or at room temperature.
