  1. Boil potatoes until tender but firm. Let cool completely and dice into bite-sized pieces.
  2. Dice tomatoes into similar-sized pieces. Chop fresh basil using a chiffonade cut (roll leaves tightly and slice thinly).
  3. Thinly slice red onion.
  4. In a bowl, gently combine potatoes, tomatoes, basil, Kalamata olives, and red onion.
  5. In a separate small bowl, whisk together extra virgin olive oil, lemon juice, salt, and freshly ground black pepper to make the vinaigrette.
  6. Pour vinaigrette over the salad and toss gently to coat. Let the salad sit for about 10-15 minutes before serving to allow the flavors to meld. Serve chilled or at room temperature.
