Low-Carb Ground Pork Bowl
Ingredients
- 450g Ground Pork
- 400g Cauliflower Rice
- 2 medium Tomatoes
- 1/2 medium Cucumber
- 1 medium Avocado
- 2 tbsp Lime Juice
- 2 tbsp Olive Oil
- 1.5 tsp Chili Powder
- 1 tsp Garlic Powder
- 1/2 tsp Cumin
- 1/4 tsp Smoked Paprika
- 1/4 medium Red Onion
- 2 tbsp chopped Fresh Cilantro
Instructions
- Finely dice the red onion. Chop the fresh cilantro.
- In a large skillet, brown ground pork over medium-high heat. Drain any excess fat.
- Season the ground pork with chili powder, garlic powder, cumin, and smoked paprika. Stir well to combine.
- Add the diced red onion to the skillet with the pork and cook until softened, about 3 minutes.
- If using frozen cauliflower rice, microwave according to package instructions. If using fresh, sauté in a pan with a little olive oil until tender and slightly browned.
- Dice the tomatoes and cucumber.
- Halve, pit, and dice the avocado. Toss with a tablespoon of lime juice to prevent browning.
- Prepare bowls: divide the cauliflower rice among three bowls. Top with the seasoned ground pork and red onion mixture, diced tomatoes, cucumber, and avocado.
- Drizzle each bowl with lime juice and olive oil. Garnish with fresh cilantro. Serve immediately.
