  1. Finely dice the red onion. Chop the fresh cilantro.
  2. In a large skillet, brown ground pork over medium-high heat. Drain any excess fat.
  3. Season the ground pork with chili powder, garlic powder, cumin, and smoked paprika. Stir well to combine.
  4. Add the diced red onion to the skillet with the pork and cook until softened, about 3 minutes.
  5. If using frozen cauliflower rice, microwave according to package instructions. If using fresh, sauté in a pan with a little olive oil until tender and slightly browned.
  6. Dice the tomatoes and cucumber.
  7. Halve, pit, and dice the avocado. Toss with a tablespoon of lime juice to prevent browning.
  8. Prepare bowls: divide the cauliflower rice among three bowls. Top with the seasoned ground pork and red onion mixture, diced tomatoes, cucumber, and avocado.
  9. Drizzle each bowl with lime juice and olive oil. Garnish with fresh cilantro. Serve immediately.
