Pasta Primavera with Lemon-Garlic Shrimp

  1. Cook linguine pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. While pasta is cooking, peel and devein shrimp. Season shrimp with salt, pepper, and red pepper flakes.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add minced garlic and cook until fragrant, about 30 seconds.
  5. Add shrimp to the skillet. Cook for 2-3 minutes per side, or until pink and cooked through.
  6. Add asparagus, green peppers, and celery to the skillet and cook until tender-crisp, about 5 minutes.
  7. Stir in lemon juice, dried oregano, and green onions. Cook for 1 minute.
  8. Add cooked pasta and reserved pasta water to the skillet. Toss to combine.
  9. Serve immediately.
