Chicken Caesar Salad Wraps
Ingredients
- 1.5 lbs Chicken breast
- 1 head Romaine lettuce
- 1 medium Avocado
- 6 tbsp Caesar dressing (low-carb)
- 3 tbsp Parmesan cheese, freshly grated
- 6 leaves Large butter lettuce leaves
- 1 tbsp Lemon juice
- 1/2 tsp Garlic powder
- 1/4 tsp Black pepper, freshly ground
Instructions
- Preheat grill or oven to 375°F (190°C).
- Season chicken breast with garlic powder and black pepper.
- Grill or bake chicken breast until cooked through (internal temperature of 165°F or 74°C). Let cool slightly and dice.
- Wash and chop romaine lettuce.
- Dice avocado.
- In a bowl, combine chicken, romaine, avocado, Caesar dressing, freshly grated parmesan cheese, and lemon juice. Mix gently.
- Spoon the mixture into large butter lettuce leaves and wrap. Serve immediately or chill for later.
