Korean Ground Turkey and Vegetable Stir-Fry
A flavorful and protein-rich Korean-inspired stir-fry with ground turkey and a variety of vegetables.
Ingredients
- 1.5 lbs Ground turkey
- 2 cups Broccoli florets
- 1 cup, sliced Carrots
- 1 medium, sliced Bell pepper (any color)
- 1/2 medium, sliced Onion
- 2 cloves, minced Garlic
- 1 tsp, grated Ginger
- 3 tbsp Low-sodium soy sauce
- 1 tbsp Sesame oil
- 1 tsp Gochujang (Korean chili paste)
- 5 cups Cooked brown rice
- 2, thinly sliced Green onions
- 1 tbsp Sesame seeds
Instructions
- Heat sesame oil in a large skillet or wok over medium-high heat.
- Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Add sliced onion, minced garlic, and grated ginger; cook for 2 minutes.
- Add broccoli florets, sliced carrots, and sliced bell pepper; cook for 5 minutes.
- Stir in low-sodium soy sauce and gochujang.
- Cook for another 3 minutes, or until vegetables are tender-crisp and sauce has thickened slightly.
- Serve over cooked brown rice. Garnish with sliced green onions and sesame seeds.
