  1. Heat sesame oil in a large skillet or wok over medium-high heat.
  2. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  3. Add sliced onion, minced garlic, and grated ginger; cook for 2 minutes.
  4. Add broccoli florets, sliced carrots, and sliced bell pepper; cook for 5 minutes.
  5. Stir in low-sodium soy sauce and gochujang.
  6. Cook for another 3 minutes, or until vegetables are tender-crisp and sauce has thickened slightly.
  7. Serve over cooked brown rice. Garnish with sliced green onions and sesame seeds.
