  2. Add avocado oil and spinach to the skillet and cook until wilted, about 2 minutes.
  3. Whisk eggs with salt, pepper, garlic powder, and red pepper flakes (if using).
  4. Pour eggs into the skillet with spinach.
  5. Scramble eggs until they are almost set but still slightly moist.
  6. Stir in bacon and shredded cheese, allowing cheese to melt slightly.
  7. Serve immediately.
