Mediterranean Hummus and Veggie Wrap
A quick and easy wrap filled with hummus, fresh vegetables, and a sprinkle of herbs.
Ingredients
- 1/4 cup Hummus
- 1 large Gluten-free wrap
- 1/4 cup, thinly sliced English Cucumber
- 1/4 cup, thinly sliced Red Bell Pepper
- 1 cup Baby Spinach
- 1/4 cup, thinly sliced Roma Tomato
- 1 tbsp, chopped Fresh Parsley
Instructions
- Lay the gluten-free wrap on a flat surface.
- Spread hummus evenly over the wrap, leaving a 1/2-inch border.
- Arrange cucumber, red bell pepper, baby spinach, and tomato slices evenly over the hummus.
- Sprinkle with fresh parsley.
- Tightly roll up the wrap, tucking in the ends as you go.
- Slice in half diagonally and serve immediately. If packing for lunch, wrap tightly in parchment paper or plastic wrap.
