Pork Chop Potato Bake
Baked fresh center cut pork chops and potatoes with garlic and rosemary.
Ingredients
- 2 Fresh Center Cut Pork Chops
- 680g Yellow Mini Potatoes
- 4 cloves minced Garlic
- 1 tbsp chopped Rosemary
- 3 tbsp Olive Oil
- 1/2 tsp Paprika
- to taste Salt
- to taste Pepper
Instructions
- Preheat oven to 400°F (200°C).
- Cut yellow mini potatoes into halves or quarters depending on size.
- In a large bowl, combine potatoes, minced garlic, rosemary, 2 tbsp olive oil, paprika, salt, and pepper. Toss well to coat evenly.
- Spread potatoes in a single layer in a baking dish.
- Season pork chops generously with salt, pepper, and a drizzle of the remaining olive oil. Place them on top of the potatoes.
- Bake in the preheated oven for 35-40 minutes, or until pork chops are cooked through (internal temperature of 145°F/63°C) and potatoes are tender and slightly browned. Ensure that the porkchops reach the internal temp of 145F for safe eating.
