  1. Preheat oven to 400°F (200°C).
  2. Cut yellow mini potatoes into halves or quarters depending on size.
  3. In a large bowl, combine potatoes, minced garlic, rosemary, 2 tbsp olive oil, paprika, salt, and pepper. Toss well to coat evenly.
  4. Spread potatoes in a single layer in a baking dish.
  5. Season pork chops generously with salt, pepper, and a drizzle of the remaining olive oil. Place them on top of the potatoes.
  6. Bake in the preheated oven for 35-40 minutes, or until pork chops are cooked through (internal temperature of 145°F/63°C) and potatoes are tender and slightly browned. Ensure that the porkchops reach the internal temp of 145F for safe eating.
