  1. In a bowl, whisk eggs with cumin, chili powder, salt and pepper.
  2. Sauté diced bell peppers in a pan over medium heat until slightly softened.
  3. Add chopped spinach to the pan and cook until wilted.
  4. Pour the egg mixture into the pan and scramble, cooking until the eggs are set but still slightly moist.
  5. Warm the corn tortillas in a dry skillet or microwave.
  6. Fill each tortilla with the egg mixture, salsa, and shredded cheddar cheese.
  7. Serve immediately, garnishing with fresh cilantro if desired.
