Spinach and Bell Pepper Scramble Tacos
A quick and easy vegetarian breakfast taco with scrambled eggs, spinach, and bell peppers.
Ingredients
- 4 Eggs
- 1 cup, diced Mini Bell Peppers
- 1 cup, chopped Spinach
- 4 Corn Tortillas
- to taste Salsa
- 1/2 cup Shredded Cheddar Cheese
- 1/4 tsp Cumin
- 1/4 tsp Chili Powder
Instructions
- In a bowl, whisk eggs with cumin, chili powder, salt and pepper.
- Sauté diced bell peppers in a pan over medium heat until slightly softened.
- Add chopped spinach to the pan and cook until wilted.
- Pour the egg mixture into the pan and scramble, cooking until the eggs are set but still slightly moist.
- Warm the corn tortillas in a dry skillet or microwave.
- Fill each tortilla with the egg mixture, salsa, and shredded cheddar cheese.
- Serve immediately, garnishing with fresh cilantro if desired.
