Mexican Chicken Salad Lettuce Wraps
A more vibrant and flavorful gluten-free lunch option with a Mexican twist.
Ingredients
- 2 cups, cooked, shredded Chicken
- 1 can, rinsed and drained Canned Black Beans
- 1/4 cup, chopped Cilantro
- 1 medium, diced Green Bell Pepper
- 1 cup, diced Tomatoes
- 2 tbsp Hot Sauce
- 2 tbsp Lime Salad Dressing
- 1 head, separated into leaves Living Lettuce
- 1 medium, diced Avocado
- 1/4 cup, finely diced Red Onion
- 1 tbsp, fresh Lime Juice
- 1/2 tsp Cumin
Instructions
- In a large bowl, combine shredded chicken, black beans, cilantro, green bell pepper, diced tomatoes, red onion, and diced avocado.
- In a separate small bowl, whisk together hot sauce, lime dressing, lime juice, and cumin.
- Pour dressing over the chicken mixture and toss gently to combine.
- Spoon chicken salad into lettuce leaves.
- Serve immediately.
