Mediterranean Tuna and Chickpea Salad
A protein-packed Mediterranean-inspired salad with tuna, chickpeas, and fresh vegetables.
Ingredients
- 1/2 can (270mL) Canned Chickpeas
- 1 can (85g) Tuna Fillets in Olive Oil
- 1/4 medium Green Bell Pepper
- 1/4 medium Red Onion
- 1/4 medium Cucumber
- 1 tbsp Lemon Juice
- 1 tbsp Extra Virgin Olive Oil
- 1/4 tsp Dried Oregano
- to taste Salt
- to taste Freshly Ground Black Pepper
Instructions
- Drain and rinse the chickpeas.
- Combine tuna, chickpeas, diced green bell pepper, diced red onion, and diced cucumber in a bowl.
- Add lemon juice, extra virgin olive oil, and dried oregano.
- Mix well and season with salt and freshly ground black pepper. Serve chilled.
