Quick & Easy Chicken Fajitas
Flavorful chicken fajitas featuring sale-priced chicken breasts and customizable toppings.
Ingredients
- 1 kg Chicken breasts
- 2 large Bell peppers (various colors)
- 1 large Onion
- 2 tbsp Fajita seasoning (low sodium)
- 1 tsp Chili powder
- 1/2 tsp Cumin
- 1/4 tsp Smoked paprika
- 1/4 tsp Garlic powder
- 10 Whole wheat tortillas
- 2 Avocado
- 1 cup Salsa (low sodium)
- 1 cup Plain Greek yogurt
- 1 Lime
Instructions
- In a bowl, combine fajita seasoning, chili powder, cumin, smoked paprika, and garlic powder. Mix well.
- Slice chicken breasts into thin strips and marinate with 1/2 of the spice mixture for at least 15 minutes.
- Slice bell peppers and onion into strips.
- Heat a large skillet or cast-iron pan over medium-high heat.
- Add chicken and cook, stirring occasionally, until browned and cooked through (about 5-7 minutes). Ensure internal temperature reaches 165°F (74°C).
- Add bell peppers and onion to the skillet. Cook until softened and slightly charred (about 5-7 minutes).
- Squeeze the juice of half a lime over the chicken and vegetables.
- Warm tortillas according to package directions or by charring them lightly on an open flame for a few seconds per side for a smoky flavor.
- Assemble fajitas with chicken and vegetable mixture, avocado slices, salsa, a dollop of Greek yogurt, and a squeeze of fresh lime juice.
